Our 2005 Napa Cabernet is a perfect synthesis of balance and intensity. Aromas of ripe blackberry, crème de cassis, violets and star anise leap out of the glass. The wine unfolds on your palate with mouth filling dark fruits and minerality, and the finish goes on and on. Those with the patience to cellar this wine will be rewarded; we recommend decanting the wine in its youth.
This Napa Cabernet received our very best fruit of the vintage, including choice lots from our Estate Vineyard located high in the hills above St. Helena.
The fruit was hand-picked and carefully sorted before undergoing native yeast fermentation. The wine was then aged for 18 months in French oak and bottled unfiltered.
The 2005 harvest was one of great extremes. A very wet spring provided a lot of potential for a big harvest of very juicy fruit. A fantastic Indian summer resulted in long hang times allowing the grapes to mature at a leisurely pace giving us outstanding character and added complexity. The result at harvest was thick skins and great flavors at moderate alcohol.
Our favorite pairings include a seared New York strip with a cabernet reduction sauce, and a Kobe Beef Burger with crumbled artisanal blue cheese.
