About This Wine:

Each vintage, Profile is a blend of our finest lots of Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot, chosen for their concentration, depth of flavor and fine tannin structure, aged in mostly new French oak chateau ferre barrels and bottled unfined and unfiltered. Opulent, rich and elegant, this proprietary Bordeaux varietal blend is loaded with dark berry, vanilla and spice flavors, silky tannins and a luxuriously long finish.

Tasting Notes:

Aromas of black cherry, cassis and vanilla are interwoven with cedar and cocoa. On the palate the wine is rich and dense with a finish that is long and complex. This wine will age well for a decade and beyond. We recommend decanting the wine in its youth.

With a smooth, complex tannin structure, it’s rich in currants, blackberries and cedar, but is too young to open now. Should hit its stride around 2010 and continue to develop for some years after. Vineyard Notes:

A blend of 79% Cabernet Sauvignon, 12% Petit Verdot, 7% Merlot, and 2% Cabernet Franc from Merryvale Estate Vineyard (St. Helena Appellation) and Beckstoffer Vineyards - ToKalon, Georges III and X.

Production Notes:

The wine goes through native yeast and malolactic fermentation and is aged in primarily new French Oak barrels for 18 months before being bottled unfiltered.

Winemaker Notes:

A very warm winter led to one of the earliest bud breaks on record and that trend carried on throughout the growing season. Veraison was completed early and growers had to hold on as acids caught up to well-developed sugars. Temperatures were steady into an early harvest of a normal sized crop and very good quality, with slightly elevated tannins, color and alcohol.
